Double Good Blueberry Pie

Ingredients

  • 3/4 cup sugar
  • 3 Tbsp cornstarch
  • 1/4 cup water
  • 4 cups blueberries
  • 1 Tbs. lemon juice
  • Baked 9″ pie shell
  1. Mix sugar and cornstarch in saucepan, add water and 2 cups berries.
  2. Cook over medium heat, stirring, until mixture is thick, clear and boiling
  3. Remove from heat, stir in lemon juice; cool
  4. Place remaining 2 cups raw blueberries in pie shell
  5. Top with cooked blueberry
  6. Chill and serve.
