Double Banana Muffin

INGREDIENTS:

 

  • 1 1/4 cup unbleached flour
  • 3 tbsp brown sugar; packed
  • 1 1/2 tsp baking powder
  • 1 tbsp pumpkin pie spice
  • 1 cup bananas; mashed
  • 1/4 cup skim milk
  • 3 tbsp fat free sour cream
  • 1 egg white, whipped

STEP BY STEP:

 

  1. Preheat oven to 350 degrees F. Prepare six muffin pans with cooking spray and flour, set aside
  2. Combine flour, sugar, baking powder, and pumpkin pie spice together in a bowl
  3. In another bowl, combine bananas, milk, sour cream, and egg white
  4. Combine dry ingredients with wet ingredients just until moistened
  5. Fill muffin pans 2/3 full. Bake 20 minutes, or until light brown.
