Dijon Salmon Vegetable Salad

Ingredients
1/2 cup Wish-Bone® Light Honey Dijon Dressing
2 cups sugar snap peas or snow peas, blanched and drained
1 cup 1/4-inch-thick cucumber slices
1 cup small mushrooms, quartered
1 can (14-3/4 oz.) Alaska salmon, drained and broken into chunks
1/4 cup thinly sliced green onion tops
Lettuce leaves (optional)
In large bowl, combine Wish-Bone® Light Honey Dijon Dressing, peas, cucumber and mushrooms. Cover and marinate in refrigerator 30 minutes. Gently stir in salmon and green onions. On serving plates, arrange lettuce, then top with salmon mixture.
