Dessert Apple Pancake


2 tbsp. sugar

1 tsp. cinnamon

2 tbsp. butter

2 apples

3 tbsp. flour

1/4 tsp. baking powder

2 egg yolks

Dash of salt

3 tbsp. milk




In 10 inch skillet melt 2 tablespoons butter. Sprinkle cinnamon, sugar over melted butter. Peel and core apples. Slice and arrange in skillet. Cook over low heat 5 minutes. Heat oven to 400 degrees. Beat 2 egg whites with 3 tablespoons sugar until they form soft peaks. Fold in flour mixture. Pour batter over apples. Bake until golden and puffy about 10 minutes. Invert. Serve with sour cream or whipped cream.
