Delicious Vinegar Pie

Ingredients

  • 1/3 C pecans
  • 3/4 C packed brown sugar
  • 1/2 C sugar
  • 1/4 C flour
  • pinch of salt
  • 1/2 C cider vinegar
  • 2 C boiling water
  • 3 large eggs
  • 2 T butter
  • 1/3 C raisins
  • 1 9 inch partially baked pie shell
  • Sweetened whipped cream
  1. Preheat oven to 350º
  2. Spread out pecans on a small baking sheet and bake 5 to 7 minutes. Cool and chop.
  3. Increase temp to 425º.
  4. In saucepan, combine brown sugar, sugar, flour and salt. Stir in vinegar and boiling water and bring to a boil. Reduce heat and cook 1 minute. Remove from heat.
  5. In medium bowl beat eggs until light and lemon colored. Gradually whisk 1 C hot vinegar mixture into eggs Stir in butter to melt. Add raisins and pecans. Turn filling into partially baked crust. Bake 10 minutes. Reduce temperature to 350º. Bake 25 to 30 minutes longer, or until edges of filling are just set.
  6. Cool completely and serve with sweetened whipped cream.
