Danish Rice Pudding

INGREDIENTS:

 

  • 3 cups cooked rice
  • 4 cups warm milk
  • 2 tsps cinnamon
  • 1/2 cup raisins
  • 1 cup sugar or honey
  • 2/3 cup dried egg mix
  • 1/4 tsp salt

STEP BY STEP:

 

  1. Combine rice, milk, sugar, and salt. Cook over low heat until thickened. Stir often
  2. Add vanilla and raisins. Stir well
  3. Rehydrate egg mix in 1/2 cup warm water. Beat until foamy
  4. Remove pudding from heat and fold in eggs. Sprinkle with cinnamon and serve.
