Dandelion Soup

Ingredients

  • 2 qt. chicken broth
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 tsp. garlic powder
  • 8 C. loosely packed dandelion greens
  • 1 lb. mixed ground meat (beef, veal, pork)
  • 1 egg
  • 3 T. grated Parmesan cheese
  • 2 T. sour cream
  • 2 T. bread crumbs
  • 2 T minced fresh parsley
  • 1 T minced onion
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. ground nutmeg
  1. In a large saucepan, combine broth, oregano. basil and garlic powder; bring to a boil. Add dandelion greens and cook till tender 5 -10 minutes.
  2. Meanwhile combine the remaining ingredients; mix well.
  3. Shape into 1/2″ meatballs. Add to soup. Cook over medium-low heat for 10 minutes or till meatballs are done.
  4. Serve immediately
