Curried Rice Salad

Ingredients

  • 1 cup uncooked rice
  • 1/2 green capsicum – seeded and chopped
  • 1/2 red capsicum – seeded and chopped
  • 3 medium onions – peeled and chopped
  • 1 large apple – peeled and chopped
  • 1 1/2 tablespoons sugar
  • 1 tablespoon parsley – chopped
  • 3/4 cup sultanas – or to taste
  • 1/2 cup salad oil
  • 1/2 cup white vinegar
  • 1 1/2 tablespoons curry powder – or to taste
  • 2 level teaspoons turmuric
  • Boiling water
  1. Place rice in the boiling water, add salt to taste.
  2. Mix turmuric with a little cold water, stir till smooth.
  3. Add to the rice and stir till combined.
  4. When cooked, drain rice well.
  5. Add all other ingredients.
