Currant Jelly Muffins
Ingredients
2 cups sifted flour
3 teaspoons Rumford Baking Powder
1/2 teaspoon salt
2 tablespoons sugar
1 cup milk
1 egg, beaten
3 tablespoons melted shortening
12 teaspoons currant jelly
Instructions
1. Sift dry ingredients together
2. Combine milk, egg and shortening and add to dry ingredients, stirring only until moistened.
3. Fill greased muffin pans 2/3 full.
4. Top each muffin with 1 teaspoon currant jelly and bake in moderately hot oven (425° F.) about 25 minutes.
Makes 12 muffins
