1 large cucumber, peeled if desired
1 cup mayonnaise
1/2 cup sour cream
1/4 cup shredded carrots
3 tbsp. finely chopped parsley or green pepper
salt and pepper to taste
Cut cucumber lengthwise in half. Hollow out. Chop pulp. Combine other ingredients. Fill the hollows with the mixture; put haves together. Slice in slices about 1/2 inch thick or less.
