Creamy Spinach Parmesan Soup

Ingredients

  • 10-oz pkg. frozen chopped spinach
  • 2 Tbsp. butter
  • 1 small onion, finely chopped
  • 2 cups Half and Half
  • 2 Tbsp. flour
  • 1/4 tsp. thyme
  • 1/2 tsp. celery salt
  • 1/8 tsp. nutmeg
  • 1 cup chicken broth
  • 1/4 cup parmesan cheese
  • croutons
  1. Cook spinach and onion in butter. Add chicken broth, puree in blender.
  2. Add half and half, flour, thyme, salt and nutmeg. Heat on medium heat about 20 minutes.
  3. Sprinkle with parmesan cheese, stir. Heat thoroughly.
  4. Serve with croutons
