Creamy Rice Pudding

INGREDIENTS:

 

  • 1/4 cup rice
  • 2 cups milk
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 2 tbsp sugar
  • 2 egg yolks, reserve whites
  • 2 egg whites

STEP BY STEP:

 

  1. Combine rice and milk in top of double boiler. Cook uncovered 45 minutes or until rice is tender
  2. Beat together egg yolks, 1/4 cup sugar, and salt. Stir some of rice mixture into beaten yolks
  3. Add yolks to hot rice mixture and cook 3 to 4 minuts, stirring constantly
  4. Remove from heat and add vanilla. Beat egg whites until frothy
  5. Add 2 tbsp sugar. Beat until stiff. Fold egg whites into pudding. Chill and serve.
