Creamy Pineapple Pie

Ingredients

  • 1/4 cup sugar
  • 3 Tbsp cornstarch
  • 1-1/3 cups pineapple juice
  • 1 egg yolk
  • 1 cups fresh pineapple chunks (1/2 inch pieces)
  • 1 9-inch baked pastry shell
  • 1/4 cup flaked coconut, toasted
  1. In a sauce pan combine sugar and cornstarch. Add pineapple juice; bring to a boil for 2 minutes
  2. In a small bowl beat egg yolk stir in 1/4 cup of the hot mixture. Return all to the pan; cook and stir for 1 minute
  3. Remove from the heat; sir in pineapple
  4. Pour into crust. Chill for 2 hours or until firm
  5. Store in fridge
  6. Sprinkle with the coconut just before serving
