Creamy Crab Soup

Ingredients

  • 1 lb crabmeat
  • 1 chicken bouillon cube
  • 1 cup boiling water
  • 1/4 cup chopped onion
  • 1/4 cup melted butter
  • 3 TBS flour
  • 1/4 tsp salt
  • dash pepper
  • 1 qt milk
  • chopped chives
  1. Rinse crabmeat and flake with a fork.
  2. In a bowl dissolve bouillon cube in boiling water.
  3. In a soup pot, cook onion in butter until tender. Blend in flour and seasonings. Add milk and bouillon gradually. Cook slowly until thick, stirring constantly.
  4. Blend in crabmeat. Cook until heated. Garnish with chives.
