Creamy Cheese Enchiladas

Ingredients

  • 6 flour tortillas
  • 3 cups shredded Monterey Jack cheese
  • 6 Tbsp. chopped green onions
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4-oz) can green chilies, seeded & chopped)
  1. Fill each tortilla with 1/2 cup cheese and 1 Tbsp. green onion
  2. Roll each individually and place in an 8-inch square shallow baking dish
  3. Melt butter in saucepan over medium heat
  4. Add flour, stirring constantly
  5. Add chicken broth to make a thick sauce
  6. Remove from heat and add sour cream and chilies; stir until smooth
  7. Pour over tortillas
  8. Bake at 350° for 20-30 minutes
