Creamed Eggs

Ingredients

  • 6 hard cooked eggs, peel & cut into 1/4 inch thick slices
  • 4 T butter
  • 4 T flour
  • 2 c milk scalded
  • 1 T green onion, minced
  • 1/2 t thyme
  • 1 T Dijon-style mustard
  1. Prepare eggs, set aside.
  2. In a small saucepan, melt butter over medium heat. Add flour. Whisk until smooth. Add milk all at once.
  3. Whisk until mixture has thickened.
  4. Add green onion, thyme and mustard. Stir well. Heat through. Gently add eggs.
  5. Cook about 3 minutes or until eggs are heated through.
  6. Serve over toast points or buttered, broiled biscuits.
