Cream Cheese Pecan Pie

Ingredients

  • 8 oz. cream cheese
  • 4 eggs
  • sugar
  • vanilla
  • 10″ shell
  • 1-1/4 cup coarse chopped pecans
  • 1 cup light corn syrup
  • 1/4 tsp salt
  1. In large bowl – with electric mixer at medium speed – beat until smooth the cream cheese, 1 egg, 1/3 cup sugar and 1 tsp vanilla
  2. Spread over bottom of shell. Sprinkle with pecans.
  3. Beat at medium speed 3 remaining eggs until frothy. Add corn syrup, 1/4 cup sugar, salt, and 1 tsp vanilla. Beat until blended
  4. Gently pour mixture over pecans
  5. Bake in pre-heated 375 oven about 40 minutes or until knife inserted into pie is clean
