Cream Cheese Pecan Crust

Ingredients

  • 8 oz. cream cheese, softened
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 (10-inch) unbaked pie shell
  • 1-1/4 cup pecans, chopped

TOPPING:

  • 3 eggs
  • 1 cup light corn syrup
  • 1/4 cup sugar
  • 1 tsp. vanilla
  1. Cream together softened cream cheese, sugar, beaten egg, salt and vanilla.
  2. Spread over bottom of unbaked pie shell. Sprinkle pecans evenly over cream cheese layer.
  3. Topping: Combine all topping ingredients and beat until smooth. Pour over pecan layer.
  4. Bake 35 to 45 minutes at 375 degrees until pecan layer is golden brown.
  5. Cool on wire rack. Serve slightly warm with whipped cream.
