Cream Cheese Crust
1 1/2 cups all-purpose flour
2 teaspoons baking powder
8 oz. cream cheese, softened
2 tablespoons butter or margarine
(not softened, but cut into small pieces)
In a large bowl combine flour and baking powder. In a separate bowl, combine 3gg and cream cheese. Mix until combined. Stir in butter or margarine chunks. Stir just until combined. Add to flour mixture, stirring until dough is stiff and then work lightly with hands until mixture is combined.
Separate the dough into two equal balls, and roll each one out to a 9-inch circle.
Makes enough crust for top and bottom of 9-inch pie, or two bottom 9-inch pie crusts.
