Cream Of Cabbage Soup

Ingredients

  • 1/2 medium head cabbage, cut up
  • 2 stalks celery, cut up
  • 1 small potato, pared, quartered
  • 1-1/2 C. water
  • 4 sprigs parsley
  • 1 C. light cream, (1/2 & 1/2)
  • 1 t. salt
  • 1/4 t. pepper
  • 2 T. butter, or margarine
  • 1 small onion, quartered
  1. Cook cabbage, potato, and onion in water until tender.
  2. Put in blender container; cover and run on speed 4 (or high) for 1-1/2 minutes. Add remaining ingredients; cover and run on speed 2 (or low) for 15 seconds, until mixed.
  3. Reheat to serve.
