Cream of Broccoli Soup

Ingredients

  • 1-1/2 lbs fresh broccoli
  • 1/2 cup onion, chopped
  • 2 (10 oz) cans chicken broth
  • 1 cup potatoes, cooked & diced
  • 1/2 tsp salt
  • dash red pepper
  • 1 cup light cream
  • 1/8 tsp nutmeg
  1. Clean & chop broccoli. Cook for 10 minutes, drain and set aside
  2. In a large pot, saute onions in butter until soft. Add broth, potatoes, salt & pepper. Bring to a boil, reduce heat and simmer 15 minutes. Add cooked broccoli & remove from heat
  3. Pour 1/2 mixture into blender & whip until smooth. Repeat with second half & return to soup pot. Add cream & nutmeg
  4. Heat thoroughly – do not boil – for about 5 minutes
  5. Garnish with fresh broccoli
