Cream Of Artichoke Soup

Ingredients

  • 3 Tblsp. butter
  • 1/2 cup chopped green onions
  • 1 bay leaf
  • 1 stalk chopped celery
  • 1 chopped carrot
  • 1 cup heavy cream
  • 1 pinch thyme
  • 1 qt. chicken consommé
  • 1 cup sliced, cooked artichoke hearts
  • 2 egg yolks, beaten
  • Salt & pepper to taste
  1. Sauté green onions, celery, carrots, bay leaf & thyme in butter (don’t break up bay leaf). Add consommé. Simmer 10 to 15 minutes.
  2. Add cooked artichoke hearts. Continue simmering another 10 minutes. Remove from fire. Remove bay leaf.
  3. Add beaten egg yolks & cream. Season with salt & pepper & serve.
