Cranberry Swirl Coffee Cake

Ingredients

  • 1/2 cup margerine
  • 3/4 cup white sugar
  • 2 eggs
  • 2 cups all purpose flour
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon almond wxtract
  • 1 16 oz can whole cranberry sauce
  • 1/2 cup slivered almonds
  1. Preheat oven to 350
  2. Grease & flour 9″ tube pan
  3. Cream margarine, adding sugar gradually
  4. Add eggs one at a time
  5. Beat on med speed
  6. Mix together flour baking soda, baking powder & salt.
  7. On low speed add flour alternately with sour cream to butter mixture ending with flour mix. Do not overbeat
  8. Stir in 1 tsp. almond extract
  9. Put layer of 1/2 of batter in bottom of pan
  10. Put layer of cranberry sauce-1/2 can
  11. Top with remaining batter & cranberry sauce
  12. Sprinkle with slivered almonds
  13. Bake at 350, 50 minutes
  14. Cool in pan about 10 minutes
  15. Remove from pan
  16. Glaze when completely cool
  17. Take about 1/2 cup vanillia frosting, melt in microwave about 15 seconds.
  18. Drizzle all over cake
