Cranberry Sweet Potato Bread

1 1/2 cup granulated sugar
1/2 cup oil
2 eggs
1/3 cup water
1 cup mashed baked sweet potatoes
1 tsp vanilla extract
1 3/4 cup all-purpose flour
1 tsp. nutmeg
1 1/2 tsp. cinnamon
1 tsp Clabber Girl Baking Powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup cranberries
1/2 cup chopped pecans

In a large bowl combine sugar, oil, eggs, vanilla and water. Beat just till mixed. In a medium bowl combine dry ingredients then add to first mixture. Stir in sweet potatoes then nuts and cranberries. Grease and flour a one-loaf pan (9×5-inch) (you may also use two 2# coffee cans) Spoon in mixture and bake at 350 degrees for 1 hour. Remove from pan and let cool on wire rack.

Makes 1 loaf OR two 2-lb. coffee cans
