Cranberry Streusel Pie

Ingredients

  • 1/3 c butter, softened
  • 3/4 c sugar
  • 1/4 c brown sugar, packed
  • 1 egg
  • 1/2 t vanilla
  • 1 c flour
  • 1/2 t baking soda
  • 1/4 t salt
  • 2 cups fresh or thawed frozen cranberries
  • 1/2 c chopped walnuts
  • 1 unbaked pie shell (9 inch)

Streusel Topping:

  • 2 T flour
  • 1/2 c brown sugar, packed
  • 1/4 t nutmeg
  • 1/2 t cinnamon
  • 2 T butter
  • 1/2 c chopped walnuts
  1. Thaw frozen cranberries in refrigerator.
  2. Cream together butter and sugars. Beat in egg and vanilla. Mix flour, baking soda and salt; stir into egg mixture (Dough is very thick). Fold in cranberries and walnuts
  3. Spread carefully into pie shell
  4. Bake 350° for approx. 50 minutes
  5. While pie bakes, blend topping ingredients until crumbly
  6. Sprinkle topping over pie as soon as it’s removed from oven; place an inverted bowl over pie and let steam 20 minutes
  7. Serve warm or cooled
