Cranberry Nut Coffeecake
2 cups whole fresh cranberries
1/2 cup granulated sugar
1/2 cup chopped walnuts
(mix above ingredients and put on bottom of 9×9 inch square pan)
1/2 cup softened butter
1/2 cup sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
1 cup all-purpose flour
1 1/2 teaspoons Clabber Girl Baking Powder
Preheat oven to 350 degrees F.
In a Large bowl cream together butter, sugar and salt. Add eggs and vanilla. Stir in flour and baking powder, mixing until ingredients are combined.
Pour into 9×9 inch pan over mixture of cranberries, sugar and walnuts. Bake at 350 degrees F. for 45 to 55 minutes, or until tests done. (A toothpick inserted in center comes out clean.)
Place on wire rack for 10 minutes to cool, loosen sides of pan and turn upside down onto plate. Serve.
