Cranberry Nut Bread
2 cups sifted all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup shortening
1 egg, beaten
3/4 cup orange juice
1 tablespoon grated orange rind
1 cup coarsely chopped cranberries
1/4 cup chopped walnuts
1 tablespoon flour
In a large bowl, sift together 2 cups flour, sugar, baking powder, salt and baking soda. Cut in shortening until mixture resembles coarse meal; set aside. In a small bowl, combine egg, orange juice and rind. Add to dry ingredients; stir until just moistened. In a small bowl combine cranberries, walnuts and 1 tablespoon flour, stir until coated and then add to the batter.
Pour batter into a greased and waxed paper lined 9″x5″ loaf pan. Bake in 350 degree F. oven for 50-60 minutes, until cake tests done. Cool in pan on wire rack for 10 minutes; remove from pan and continue to cool on wire rack.
Makes 1 loaf.
