Cranberry Cream Pie

Ingredients

Pastry:

  • 1 c flour
  • 1 c walnuts coarsely ground
  • 1 tsp salt
  • 1/2 c (scant) oil
  • 1 T cold water
  1. Combine flour, nuts and salt in 9″ pie pan
  2. Make a well in center: pour in oil & water. Blend with fork.
  3. Press into bottom & sides of pan

Filling:

  • 1 pkg rasberry gelatin
  • 1 c hot water
  • 1 can cranberry sauce
  • 1 c sour cream
  1. Dissolve gelatin in water. Cool to lukewarm. Stir in sauce & cream
  2. Chill until slightly set. Pour into shell
  3. Chill til firm

Topping:

  • 1 (3-oz) pkg cream cheese
  • 1 c heavy cream
  • 1/2 c small marshmallows
  • 1/4 c sugar
  1. Gradually blend in cream to softened cheese. Fold in marshmallows & sugar.
  2. Chill 4 hours. Whip until thickened
  3. Spread & swirl over filling
