Cranberry Bread 2


2 c. flour
3/4 c. sugar
1-1/2 tsp. baking powder
1/2 tsp. baking soda
Pinch of salt
3/4 c. orange juice
1 egg, beaten
1 c. fresh or defrosted cranberries
1/4 c. chopped nuts (optional)


Stir together flour, sugar, baking powder, soda and salt. Beat in juice and egg until well blended. Stir in cranberries and nuts. Spray the bottom of 9×5 inch non stick loaf pan with cooking spray. Spoon in batter. Bake at 350 degrees for about 1 hour or until bread tests done.
