Country Caviar

Ingredients

  • 3 cups cooked, drained, rinsed black-eyed peas
  • 1 cup cooked rice
  • 1/2 cup chopped green onion, including tops
  • 1/2 cup oil
  • 3/4 cup cider vinegar
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 to 2 tsp cayenne pepper
  1. Mix all ingredients together gently
  2. Serve chilled over lettuce, garnished with chopped tomato
