Cool Celery Pockets

Ingredients

  • 1 pita pocket bread
  • 1/2 cup lettuce or sprouts
  • 2 tbsps. of chopped celery
  • 2 tbsps. of one of the following: tomatoes,
    cucumbers, mushrooms, apples – 2 tbsps. low-fat shredded cheese
  • 2 tbsps. of lean chicken chunks, turkey or water-packed
    tuna
  • 2 tbsps. salsa
  • low-fat mayonnaise (optional)
  1. Cut the pita bread in half and open the pocket.
  2. Stuff with suggested fillings.
