Cool Celery Pockets
- 1 pita pocket bread
- 1/2 cup lettuce or sprouts
- 2 tbsps. of chopped celery
- 2 tbsps. of one of the following: tomatoes,
cucumbers, mushrooms, apples – 2 tbsps. low-fat shredded cheese
- 2 tbsps. of lean chicken chunks, turkey or water-packed
- 2 tbsps. salsa
- low-fat mayonnaise (optional)
- Cut the pita bread in half and open the pocket.
- Stuff with suggested fillings.
