Cooked Salad Dressing

Ingredients

  • 1 1/2 Tbsp. sugar
  • 3/4 tsp. salt
  • 1/2 tsp. dry mustard
  • dash of cayenne pepper
  • 2 to 3 Tbsp. flour
  • 3 Tbsp. melted table fat
  • 3 egg yolks (can use 2)
  • 3/4 c. milk or water
  • 1/4 c. vinegar
  1. Mix sugar, seasonings and flour together in saucepan.  Add fat and blend.
  2. Beat yolks until thick and add milk, stirring.  Combine yolk mixture with sugar mixture.
  3. Cook, stirring until mixture begins to thicken; cool.
  4. Add vinegar and reheat continuing to cook and stir until thickened.
  5. Store dressing tightly covered in refrigerator.
