Confetti Soda Bread
2 cups all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons Clabber Girl Baking Powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup margarine or butter
1 cup buttermilk
1 6-ounce package mixed dried fruit bits
Grease a baking sheet; set aside. In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut in margarine till mixture resembles coarse crumbs. Add buttermilk and fruit bits. Using a fork, stir just till moistened.
On a well-floured surface, knead dough for 10 to 12 strokes. Shape into a ball.
Place dough on the prepared baking sheet. Flatten slightly to form a 6-inch circle with a slightly mounded center. Brush top and sides with milk. Cut a 1/2-inch-deep cross in the top. Bake in a 325° oven for 55 to 60 minutes or till golden brown. Cool on a rack. Serve warm. Makes 8 servings.
