Cold Beet Soup


  • 2 15-oz jars cooked, peeled beets
  • 2 small cucumbers, peel and diced
  • 3 green onions, diced
  • 1/2 tsp. dried dill
  • 1 garlic clove, finely minced
  • dash red wine vinegar
  • salt and pepper to taste
  • Sour cream for garnish
  1. Put beets, cucumbers and onions in food processor or blender and liquify into rich, thickened liquid
  2. Pour into a serving bowl. Add dill, garlic, vinegar and salt and pepper. Stir well to blend
  3. Chill well and serve cold with dollop of sour cream in corner of each individual serving bowl
