- 3 large potatoes
- 2 Cups chopped Kale
- 2 diced green onions (scallions)
- 2 TBLSP chopped parsley
- salt, pepper butter
- Prepare the potatoes as you would to make mashed potatoes. Diced, cooked until tender, drain off excess water, add milk, “mash until creamy”..salt and pepper to taste.
- In sauce pan,quickly saute the onions in l Tablespoon of butter until just tender. Add the chopped kale and parsley and saute until the Kale has softened, then cover and turn the heat off. Kale should have enough moisture from the washing to create the steam necessary for cooking.
- Fold the Kale mixture into the potatoes, place in buttered casserole dish, and bake uncovered at 350 degrees for approximately 15 minutes.
