Colcannon Soup

Ingredients

  • 5 or 6 large potatoes, diced
  • 1 medium onion, chopped
  • 1/4 head cabbage, chopped
  • 1 can cream of celery coup
  • 2 or 3 cups milk, (can use skim or whole)
  • 2 Tbsp butter or margarine
  • salt & pepper, to taste
  • 7 or 8 slices of bacon, cooked & crumbled
  1. Cook potatoes, onion, and cabbage in just enough water to cover
  2. Add soup, milk, butter and seasonings: heat thoroughly
  3. Add bacon just before serving
