Coffee Drop Cookies
1 cup shortening
2 cups light brown sugar, firmly packed
3 cups sifted flour
3 teaspoons Rumford Baking Powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups seedless raisins (cut)
1 cup cold strong coffee
1. Cream shortening, add sugar gradually, creaming until light and fluffy.
2. Add eggs, one at a time, beating well after each addition.
3. Sift flour, Rumford Baking Powder, cinnamon and salt together. Add raisins, mix well. Add to creamed mixture alternately with the coffee, beating until smooth.
4. Drop by teaspoonfuls on a greased baking sheet and bake in a moderate oven (375° F.) 12-15 minutes.
Makes 6 dozen cookies.
