Coconut Pie

Ingredients

  • 2 cups sugar
  • 1/2 cup (have at room temp,) margarine
  • 5 eggs
  • pinch salt
  • 1 cup evaporated milk
  • 1 3-1/2 can coconut
  • 1 tsp. vanilla
  • 2 pie crust
  1. Cream sugar and margarine, until light and fluffy
  2. Add eggs (one, at a time beating after each addition). Add salt. Stir in coconut and vanilla
  3. Pour into 2 unbaked pie shells and bake at 350 for 35 to 40 minutes
