Classic Sabbath Cholent

There are as many recipes for this as there are nationalities, as Jewish people, from every country, add their own spice and flair to this slow cooking all-in-one meal. Nutritionists would laud this recipe – tons of dried beans and legumes; a little bit of beef.

½ cup dried kidney beans
½ cup dried lima beans
½ cup dried navy beans
6 small potatoes
1 pound stew meat, cut in large cubes
½ cup barley
1 onion, peeled and halved
1 ½ teaspoons salt or to taste
½ teaspoon pepper
1-tablespoon sweet paprika
3 cloves of garlic, finely minced
¼ cup red wine
¼ cup ketchup
1 cup vegetable or beef broth

Place dried beans into a 6 quart dutch oven and cover with water. Allow to soak overnight, and drain before proceeding with recipe.

Preheat oven to 325 F. Place everything in a 6 quart Dutch oven and stir to blend. Cover, and place in oven. Slow bake until meat is tender, about 3-4 hours.

Serves 4-6
