Chunky Vegetable Dip
- 1 C. sour cream
- 1/2 C. finely chopped, seeded cucumber
- 1/4 C. chopped green onions
- 1/4 C. finely chopped radishes
- 1-2 T. cider vinegar or tarragon vinegar
- 1 1/2 tsp. prepared horseradish
- 3/4 tsp. salt
- 1 large bell pepper, cut into a cup
- In a bowl, combine the first 7 ingredients; mix well. Cover and refrigerate.
- Serve in the pepper cup with vegetables for dipping.
