Christmas Carol Cake


1 c. oil
2 c. sugar
3 eggs (add one at a time)
2 c. flour
2 tsp. vanilla
1 1/2 tsp. cinnamon
1 tsp. soda
3 apples, diced well
1 c. chopped walnuts
3/4 c. raisins


Preheat oven to 325 degrees. Spray 12 cup Bundt pan with Baker’s Joy. Combine ingredients in order listed; blend well after each: sugar, eggs, flour, vanilla, cinnamon, soda, apples, walnuts and raisins. Pour into pan. Bake 1 hour and 10 minutes or until toothpick comes out clean. Cool 45 minutes. Invert on platter. Glaze and decorate.
