Chocolate Strawberry Vanilla Sauce for Cherry Pie
1 (12 oz.) package mini semi-sweet chocolate chips
1 cup frozen strawberries, thawed, include juice
2 teaspoons vanilla extract
Grand Marnier liqueur to taste
Combine all ingredients, except Grand Marnier, in a food processor or blender container; cover and process or blend until smooth. Gradually add Grand Marnier and continue processing or blending until sauce consistency. Generously spoon onto center of dessert plates and top with a pie slice.
Flavored Whipped Cream
Pie dolloped with whipped cream is a welcome combination. The secret to fluffy, irresistible white clouds of cream is chilling both beaters and bowl. Beat 1 cup heavy cream, starting at low speed of an electric mixer. When cream begins to thicken, add 1/2 teaspoon vanilla extract and powdered sugar to taste and switch to high speed. Just before peaks begin to form, add 1 tablespoon of your favorite flavoring and continue beating until stiff, but creamy. Here are several tasty options: Chocolate, Coffee, Cointreau, or Grand Marnier liqueur, or Peach Schnapps, Apple Brandy, or Calvados, or your favorite fruit juice.
