Chocolate Souffle

Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. milk
  • 1 c. stale cake crumbs
  • 2 sq. unsweetened chocolate
  • 1/3 c. sugar
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 3 egg whites
  • 3 egg yolks

 

  1. Melt butter; blend in flour and add milk gradually. Combine this with cake crumbs, chocolate, sugar, salt and
    vanilla. Set aside.
  2. Beat egg yolks until light lemon yellow colored.
  3. Beat egg whites until they stand in peaks. Add to egg yolks, chocolate mixture and then carefully fold in beaten
    egg whites.
  4. Turn into 8-inch souffle pan.
  5. Bake at 350 degrees for about 45 minutes.
  6. Serve with whipped cream and ground cinnamon sprinkled on top.
