Chocolate Peanut Butter Pie

Ingredients

  • 9″ baked pie crust
  • 1 cup powdered sugar
  • 1/2 cup peanut butter
  • 3 egg yolks (save whites for meringue)
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/4 cup unsweetened cocoa
  • 2 tbsp butter
  • 2-1/2 tbsp cornstarch
  • 2 cups milk
  • 1/2 tsp salt

Meringue:

  • 3 egg whites
  • Pinch salt
  • 1/8 tsp vanilla
  • 3 tbsp sugar
  • 1/2 tsp cream of tartar
  1. Preheat oven to 325 degrees F.
  2. Mix powdered sugar and peanut butter until crumbly; spread over bottom of pie shell.
  3. Combine remaining pie ingredients in the top of a double boiler over simmering water; cook and stir until thick. Pour over peanut butter mixture.

Meringue:

  1. Beat egg with salt and vanilla until stiff. Add sugar and cream of tartar; beat until blended. Top pie filling with meringue, spreading to edges.
  2. Bake 10-12 minutes, until golden brown, watching carefully.
