Chocolate-Peanut Butter Chip Pie


  • 9 inch Peanut Butter Chip crust
  • 1 cup Reese’s Peanut Butter chips
  • 1/4 cup butter or margarine, melted
  • 1/4 cup sugar
  • 3 Tbsp Hershey’s cocoa
  • 1 envelope unflavored gelatin
  • 1/2 cup sugar
  • 1-3/4 cups milk
  • 2 eggs, separated
  • 1 tsp vanilla
  • 1 Tbsp sugar
  1. Prepare peanut butter chip crust (below)
  2. Measure peanut butter chips into mixing bowl
  3. Blend melted butter, 1/4 cup sugar and cocoa until smooth in second bowl. Set aside. Combine gelatin and 1/2 cup sugar in medium saucepan. Add milk
  4. Beat in egg yolks slightly. Add to gelatin. Cook and stir over medium heat until gelatin is dissolved and mixture lightly coats the spoon; do not boil. Remove from heat; add vanilla. Immediately pour 1 cup hot mixture into peanut butter chips; stir until chips are melted and mixture is smooth. Add remaining hot mixture to cocoa mixture; stir until smooth with wire whisk. Chill both mixtures until partially set
  5. Pour chocolate into pie shell
  6. Beat egg whites with 1 Tbsp sugar; fold into peanut butter mixture. Pour onto layer; chill completely
  7. Garnish with sweetened whipped cream or non-dairy whipped topping if desired
