Chocolate Caramel Tart

INGREDIENTS:

 

  • 2 cups flour
  • 2 tbsp sugar
  • 6 lbs cold unsalted butter
  • 2 tbsp cream
  • 1 egg
  • pinch of salt
  • 1 cup sugar
  • 3 tbsp water
  • 1 cup cream
  • 2 large eggs
  • 6 lbs bittersweet chocolate, coarsely chopped

STEP BY STEP:

 

  1. Combine flour, sugar, salt and butter. Mix together until the butter is the size of small peas
  2. Whisk together the cream and the egg. Pour the cream mixture into the flour butter mixture and mix just until the dough comes together
  3. Roll the dough onto a lightly floured surface and line a nine-inch tart shell. Freeze or refrigerate the tart shell for at least one hour
  4. Combine flour, sugar, salt and butter. Mix together until the butter is the size of small peas. Whisk together the cream and the egg
  5. Pour the cream mixture into the flour butter mixture and mix just until the dough comes together. Roll the dough onto a lightly floured surface and line a nine-inch tart shell. Freeze or refrigerate the tart shell for at least one hour
  6. Preheat the oven to 400 degrees. Line the tart shell with parchment paper. Bake for about 15 minutes until the edges of the shell are golden brown. Remove the parchment paper and continue to bake until the bottom of the tart shell is golden brown. Set aside to cool while you make the filling
  7. Combine the sugar and water in a medium-sized, heavy-bottomed sauce pot. Cook over medium heat until the sugar dissolves. Increase to high heat and cook until the sugar is amber in color
  8. Remove the pot from the heat and slowly add the cream. Pour the mixture in a bowl and allow to cool for 10 minutes. In a medium-sized bowl lightly whisk together the eggs and then whisk in the caramel mixture
  9. Scatter the chocolate pieces in the bottom of the tart shell. Pour the caramel filling over the chocolate.
