Chinese Vegetable Stir-fry

Ingredients

  • Sweet ‘N Sour Sauce ingredients:
    – 3/4 cup pineapple juice
    – 1 tbsp. sugar
    – 1 tbsp. lemon juice
    – 1 1/2 tsps. cornstarch
    – 1 tsp. light soy sauce
  • Stir-Fry Vegetables:
    – 4 tsps. vegetable oil
    – 1 cup broccoli florets
    – 1 cup carrot, sliced
    – 1 cup cauliflower florets
    – 1 cup celery, sliced
    – 1 cup red bell pepper, chunks
    – 1 cup sugar peas, stems removed
  1. Combine the ingredients for the Sweet ‘N Sour sauce in a mixing bowl.
  2. Heat oil in a skillet over medium high heat. Add broccoli, carrots, cauliflower, and celery, cook for 2 minutes.
  3. Add bell pepper and sugar peas, cook for 2 minutes.
  4. Add Sweet ‘N Sour sauce, bring to a boil and cook for 1 minute, covered.
  5. Serve vegetables while hot.
