Chilled Cantaloupe Soup


  • 3 medium cantaloupes, halved
  • 1/4 cup dry sherry
  • 1/4 cup sugar
  • 3/4 cup fresh orange juice
  • Mint leaves
  1. Scoop pulp from cleaned cantaloupes.
  2. Combine cantaloupe pulp, sherry, sugar, and orange juice in container of blender or food processor. Process until smooth, then chill mixture thoroughly.
  3. Serve in small soup bowls garnished with mint leaves and fresh fruit of your choice.
