Chicken And Squash Pizza

Ingredients

  • Bertucci’s Pizza dough
  • 1 butternut squash, mashed
  • 6 to 8 oz. roasted chicken, cut into 1-inch pieces
  • 1 pkg. herbed goat cheese
  • 2 sweet onions
  • Fresh Thyme
  • Olive Oil
  1. Caramelize onion (chop onion, place in sauté pan with approximately 1/4 olive oil, sauté 30 minutes on medium low heat until golden).
  2. Roll out pizza dough on pizza stone. Place dollops of mashed butternut squash over dough. Add caramelized onions, chicken, goat cheese and thyme.
  3. Cook 12 to 15 minutes at 425 degrees or until crust is golden. Add thyme sprigs to garnish.
