Chicken Salad Mold


  • 1 small envelope gelatin (1/4 oz)
  • 1/4 cup cold water
  • 1 cup hot chicken broth
  • 1 cup mayonnaise
  • salt
  • 1 tsp fresh ground pepper, or more
  • 3 stalks celery, chopped
  • 4 boiled eggs, chopped
  • 3 cups cooked chopped chicken (about 4-5 chicken breast halves)
  1. Add the gelatin to 1/4 cup cold water
  2. Let stand
  3. Cook chicken in water with a small amount of salt and some pepper
  4. When the chicken is done, remove; cool and chop
  5. Reduce the broth until you have about a cup left without the fat on top – this is why you do not add a lot of salt at the beginning
  6. Take the cup of hot broth and mix with mayo in bowl
  7. Add the gelatin water mixture and whisk also
  8. Stir in the rest of ingredients and taste for salt & pepper
  9. If it tastes a little salty, remember you did not add much salt to the meat so it will absorb more from the mixture.
  10. I personally like it with a lot of pepper, but that is my taste
  11. Pour into a mold, cover and refrigerate overnight
